With Roasted Beets, Fresh Citrus, Chevre Carpaccio, Goat cheese, Toasted Pistachios, Citrus Ginger Vinaigrette

Striking a perfect balance between vibrant colours, refreshing flavours, and indulgent textures, our beet, citrus and chevre carpaccio is a perfect addition to any holiday spread. The earthy sweetness of roasted beets pairs wonderfully with the bright, tangy notes of fresh citrus. Goat cheese adds a luxurious creaminess while toasted pistachios and a citrus ginger vinaigrette add crunch and acidity to create the perfect bite. Braised Beef Short Rib Sliders

With Soft Brioche Buns

Year after year, sliders rank our number one seller for holiday parties and it’s easy to pinpoint why – because they are awesome! Everyone loves mini burgers made in countless scrumptious ways. My personal favourite is our braised beef short rib slider served on a soft brioche bun. Our executive chef Chris Canham is well known for his succulent 72-hour braised beef, so we figured it would be a popular option on our winter seasonal finger foods menu as well. It has proven to be the talk of every event since!

Classic Caprese Salad

with Herbaceous Gremolata

With the holidays fast approaching, we're turning our attention to comforting, warming dishes, while also giving some of summer’s best flavours a cozy winter twist. One of our most beloved summer favourites, and a standout on our menu, is the classic caprese salad. Our winter version reimagines this sunny dish, bringing a touch of warmth with grilled peaches and roasted squash paired beautifully with creamy fiore di latte. The dish is perfectly finished with a vibrant, herbaceous gremolata, creating a delightful balance of flavours and textures.

Tarte Tatin

With Caramel Apple Compote, Sablé Breton, Mascarpone Parfait, Puff Tuile, Cider Caramel (NF)

Our Tarte Tatin draws inspiration from Pastry Sous Chef Ankith Vishwanath’s experience at a bistro in the heart of France, where he first discovered the classic Tarte Tatin. Combining tradition with modern techniques, we created this plated dessert using Christophe Michalak’s method of caramel-braised apples and a Sablé Breton base. This elegant dessert balances the bittersweet notes of caramel with the acidity of green apples, offering a refined taste that echoes its French origins.

Its versatility and beautiful presentation have quickly made it a top performer, capturing the essence of French cuisine and contemporary culinary technique.

With our Nitro Ice Cream station, guests watch liquid freeze into delicious smooth textured ice cream in just 60 seconds. The swirling clouds of nitrogen always add a welcome hint of dramatic flair. Apart from the show, the real highlight is the memorable selection of new and favourite textures and flavours! From savoury foie gras with brandy & black cherry to rich
espresso-spiked Lindt dark chocolate, and everything in between. If you’re feeling adventurous, we go all-out with options like watermelon mint & vodka sorbetto or Ontario chèvre ice cream with Riesling-soaked grapes and a drizzle of rosé syrup. Mini Potted Desserts

When it comes to holiday entertaining, we are always looking to elevate the guest experience with a ‘wow’ moment while still keeping our creations both approachable and pragmatic. With our popular Mini Potted Desserts, we use inspiration from very trendy desserts by carefully constructing their elements in layers and textures in miniature ‘pots’ that can be displayed on a station.

From a rich and delicate salted caramel creme brulee, a tangy and decadent key lime pie, an earthy and luscious tiramisu, or a more exotic passion fruit panna cotta, these desserts will complement the end of any meal!
